Different colours let you know which cheese it is such as black for mature. Simply dip half the cheese block and roll the far edges in the melted wax then let it cool for five minutes and then do the other side. Repeat the process again so that your cheese has had two coats.  Stored dry and cool your blocks of cheese may last anywhere up to 25 years.
